Storing Syrups
Use clean bottles, label each with the syrup and date, and keep them in the fridge. A small splash of vodka helps preserve syrups for cocktails, but leave it out of anything for kids or zero-proof drinks.
1:1 sugar to water by volume (or weight). Rich syrup is 2:1. Our recipes use 1:1 unless they say 'rich.' If you swap in rich syrup, use about two-thirds as much.
How long does simple syrup last?
In a clean, sealed bottle in the fridge, 1:1 simple syrup lasts about 2–4 weeks; rich 2:1 syrup lasts 1–3 months. Infused syrups with fresh herbs or fruit last 1–2 weeks. Toss anything cloudy or moldy.
Do I need to boil simple syrup?
No. Stir sugar into hot tap water or warm water until dissolved. Boiling only matters for infusions (spices, ginger, cranberries) where you're extracting flavor.
What can I use instead of simple syrup?
Honey syrup, maple syrup, or agave syrup all work. Maple and honey are sweeter, so use about three-quarters as much. Each brings its own flavor, so pick one that suits the drink.
What's the difference between real and store-bought grenadine?
Real grenadine is pomegranate juice and sugar: tart, fruity, and deep ruby. Most store-bought versions are corn syrup, flavoring, and red dye. Homemade takes 10 minutes and tastes far better.
