Batch Cocktails: How to Make Big-Batch Drinks for a Crowd (With the Dilution Math)
How to batch any cocktail for a party: the simple dilution rule, what to add when, and five big-batch recipes (margaritas, rum punch, mules, espresso martinis, whiskey sours) with zero-proof pitchers.
Batch cocktails are how you host a party and actually attend it. Instead of shaking drinks one at a time, you mix a pitcher, bottle, or punch bowl ahead and pour all night. The math is simple once you know the one step most people miss, which is adding water. The five recipes below open at 8 servings. Tap Punch bowl · 16 for a bigger crowd or 1 to see a single drink, and every one has a zero-proof batch alongside (tap 🌿 Mocktails at the top).
How to Batch Any Cocktail
Multiply each ingredient by the number of drinks.
Add water if the drink is normally shaken or stirred with ice. Shaking and stirring melt ice into the drink, about 20–25% dilutionDilutionThe water melted ice adds while you shake or stir, about 20–25%. Batched drinks need it added as cold water.. Without it, a batched margarita tastes hot, sweet, and flat. The recipe cards calculate it for you.
Skip the water for drinks built over ice, drinks topped with soda or sparkling wine, and anything you’ll still shake to order.
Keep bubbles separate. Add soda, ginger beer, or sparkling wine by the glass or right before serving.
Chill the batch, not the dispenser. Serve over fresh ice, never ice in the batch.
Batching is just multiplication, plus one extra ingredient: water.
Big-Batch Margaritas
The classic 2 : 1 : ¾ margarita (tequila, fresh lime, orange liqueur), scaled up with its dilution water added, so you can pour straight from a dispenser over ice. It tastes exactly like a freshly shaken one.
Juice limes the same day. An electric juicer saves your wrists.

Batching it? Stir in of cold water for the dilution the ice would add, chill at least 2 hours, then pour over fresh ice. Skip the water if you’ll still shake or stir each drink with ice.
Method
1Stir the tequila, lime, orange liqueur, and agave together in a pitcher or dispenser.
2Add the cold water shown below (it replaces the dilution from shaking), then chill for at least 2 hours.
3Serve over ice in salt-rimmed glasses. Stir the batch before each round; lime settles.

How the swap works: Black tea stands in for tequila's dry backbone, orange juice for the orange liqueur, and salt for the round, full taste. It gets the same water and the same salt rims.

Party Rum Punch
The old Caribbean rhyme is the whole recipe: one of sour, two of sweet, three of strong, four of weak. That’s lime, syrup, rum, and juice (with a little water from the ice). It’s forgiving, easily scaled, and made for a punch bowl.
One of sour, two of sweet, three of strong, four of weak.

How the swap works: Punch was born with tea in it, so black tea is the natural 'strong' part here. It adds tannin and depth, and a little less syrup keeps it from getting sweet.

Big-Batch Moscow Mules
The trick with any fizzy drink: batch the base, not the bubbles. Mix vodka and lime in a pitcher, then pour about 2½ oz per mug and top each with ginger beer.

How the swap works: More lime and a little ginger syrup bring the heat and edge; the ginger beer does the rest. Keep the mix and the ginger beer separate until pouring.

Batched Espresso Martinis
Espresso martinis need a hard shake to build their foam, so batch the base and shake two at a time. Bottle it the afternoon before and keep it in the fridge, and each round takes 30 seconds.
Shake to order in pairs: that's where the crema foam comes from.

Method
1Mix everything and keep it in the fridge, in a sealed bottle, for up to 2 days.
2To serve, shake about 3½ oz per drink hard with ice, two at a time, and strain into chilled coupes. (Skip the water line: shaking adds it, and it's what makes the foam.)

Big-Batch Whiskey Sours
A sour without egg white batches well for a few hours. Bourbon, fresh lemon, and syrup with the dilution water added, poured over ice with a lemon wheel and a cherry. Mix it the afternoon of the party; fresh citrus fades after about six hours.

How the swap works: A one-for-one swap of strong black tea for bourbon keeps the ratios identical, and the tea's tannin gives it a whiskey-like grip.

Always Batch the Zero-Proof Too
Set the zero-proof batch right beside the spirited one, in a matching dispenser with the same garnish and a clearly different label or ribbon. Guests who aren’t drinking get the same experience, and nobody has to ask.
Always set the zero-proof batch right next to the spirited one, clearly marked.
A quick way to remember the math: multiply, add a quarter as water if it would’ve been shaken or stirred, and keep the bubbles out until the last second.
For drinks normally shaken or stirred with ice, add about 20–25% of the batch's volume as cold water, since that's what the ice would have melted in. Skip it for drinks topped with soda or served in a punch bowl with a big ice block, and for anything you'll still shake to order.
How far ahead can I batch cocktails?
Spirit-only drinks (Negronis, old fashioneds, Manhattans) keep for weeks. Drinks with fresh citrus taste best within about 6–12 hours. Never add soda, sparkling wine, or ginger beer until you're pouring.
How many drinks per guest should I plan for?
A good rule is two drinks per guest for the first two hours, then one per hour after that. Plan the zero-proof batch at roughly a third of the total. Many guests will switch between the two.
Should I put ice in the batch?
No. Keep the batch cold in the fridge and serve it over fresh ice in each glass (or over one large block in a punch bowl). Ice in a dispenser melts and waters the whole batch down.
What are the best cocktails to batch?
Built or stirred drinks batch best: punches, sangria, mules, Negronis, old fashioneds, and margaritas. Avoid egg-white drinks and anything that relies on a fresh shake for its foam unless you shake to order.
