New Year’s Eve cocktails should sparkle, literally. These five all have bubbles or a little gold, and they’re built for a party: one classic, one big punch bowl, one stirred-style sipper, one crowd-pleaser, and one light spritz to pace the night. Every card has a zero-proof twin that looks identical in the glass, so everyone can toast at midnight. Tap 🌿 Mocktails at the top to flip all five.

French 75

The New Year’s classic, named after a French artillery gun for its kick. Gin, lemon, and a little sugar shaken, then topped with champagne. It’s crisp, elegant, and dangerously easy to drink.

The French 75: gin, lemon, and champagne. The New Year's classic.

Cut a long twist with a channel knife and express a peel it over the glass before dropping it in. The lemon oil is the first thing you smell.

Ingredients (1 drink)

Garnish: Long lemon twist

Method

  1. 1Shake the gin, lemon, and syrup with ice.
  2. 2Strain into a chilled flute and slowly top with champagne.
  3. 3Express a long lemon twist over the top and drop it in.

Ingredients (1 drink)

Garnish: Long lemon twist

Method

  1. 1Shake the verjus, lemon, and syrup with ice.
  2. 2Strain into a chilled flute and slowly top with non-alcoholic sparkling wine.
  3. 3Express a long lemon twist over the top and drop it in.

How the swap works: Verjus gives a soft, wine-like acidity in place of the gin's bite, and non-alcoholic sparkling wine keeps it dry. For a strict 0.0%, use sparkling white grape juice and cut the syrup to ¼ oz.

Pomegranate Champagne Punch

If you’re hosting more than eight people, make this. Stir the pomegranate base ahead, keep it cold, and add sparkling wine and a big block of ice when guests arrive. It’s jewel-red and tart, not sweet.

Pomegranate Champagne Punch: one bowl, midnight sorted.

Set out a second bowl for the zero-proof version, which uses sparkling grape juice cut with soda, with its own ladle.

Two bowls, two ladles: one sparkling wine, one sparkling grape.

Garnish: Pomegranate seeds, orange wheels, rosemary

Method

  1. 1Stir the pomegranate, orange liqueur, lemon, and syrup together in a punch bowl and chill.
  2. 2Add a large block of ice, then pour in the sparkling wine right before serving.
  3. 3Float the pomegranate seeds, orange wheels, and rosemary on top.

  3. 3Float the pomegranate seeds, orange wheels, and rosemary on top.

How the swap works: Sparkling grape juice alone is too sweet, so it's cut with club soda, and the syrup disappears entirely. Orange juice replaces the orange liqueur.

Gold Rush

A modern classic: essentially a whiskey sour made with honey instead of sugar. It’s rich and golden, and a tiny pinch of edible gold luster makes it swirl like a snow globe at midnight.

The Gold Rush: three ingredients, and a pinch of edible gold for midnight.

Only use dust labeled edible. Craft glitter isn’t food, however “non-toxic” the label says.

How the swap works: Black tea gives bourbon's tannin, and ginger in the honey syrup brings back the warmth alcohol usually provides.

Sparkling Cosmopolitan

The cosmo is a party icon, and topping it with a little sparkling wine makes it lighter and more festive. The flamed orange twist is theater: warm the peel, squeeze it over a lit match, and the oils spark and caramelize.

The Sparkling Cosmo: the classic, topped with bubbles.

Hold the peel a few inches above the glass and keep the flame away from anyone’s hair and decorations.

How the swap works: Orange juice and a touch of syrup rebuild what the orange liqueur added; the flamed orange twist carries a lot of the cosmo's aroma on its own.

Elderflower Midnight Spritz

Pace yourself with this one. It’s low in alcohol, floral, and very refreshing, just elderflower liqueur, prosecco, and soda over ice with a sprig of mint. The zero-proof twin uses elderflower cordial and is so close you’ll want to label them.

The Elderflower Midnight Spritz is light enough to last until 2 a.m.

Chill your bubbles properly. A bucket of ice plus water (and a handful of salt) chills a bottle in 15 minutes.

Chill the bubbles properly: an ice bucket with ice AND water works fastest.

How the swap works: Elderflower cordial has the same floral character as the liqueur; a little lemon balances its sugar.

The Midnight Plan

At 11:50, pour a tray of flutes, half from sparkling wine and half from non-alcoholic sparkling, with a lemon twist in one and an orange twist in the other so guests know which is which. You’ll be glass-in-hand when the countdown starts.

Pour the midnight flutes at 11:55 and set them on a tray.

For more bubbles, see our prosecco and champagne cocktails, and our batch cocktail guide covers scaling for a big party.

Five drinks, two ways: everyone raises a glass at midnight.

Frequently Asked Questions

What is the best cocktail for New Year's Eve?

Anything with bubbles. The French 75 is the classic, and Pomegranate Champagne Punch is the easiest for a crowd. For something stirred and grown-up, the Gold Rush is hard to beat.

How many bottles of champagne do I need for a New Year's party?

A 750 ml bottle pours about 5 flutes neat, or 8 cocktails topped with 3 oz each. Plan on at least one sparkling drink per guest at midnight, plus half that again for the rest of the night.

What can non-drinkers toast with at midnight?

Every drink here has a zero-proof twin that looks identical in the glass. Non-alcoholic sparkling wine is the closest to champagne, while sparkling white grape juice is sweeter and fully 0.0%.

How to make any cocktail zero-proof →
Is edible gold dust safe in drinks?

Only if it's labeled edible, usually as 'edible luster dust' or edible gold leaf. Craft glitter and 'non-toxic' decorative dusts are not food and shouldn't go in a drink.

How do I chill champagne quickly?

Submerge the bottle in a bucket of ice AND cold water with a handful of salt. It chills in about 15–20 minutes, much faster than ice alone or the fridge.
